- 1 c. chopped onion
- 1 chopped hot or bell pepper
- 1/2 stick butter
- 1 (15 1/2 oz.) can cream-style corn
- 1 c. uncooked Minute rice
- 1 small jar pimentos
- 8 oz. grated Cheddar cheese
Directions

1Saute onion and pepper in butter.

2Add remaining ingredients. Mix well and place in a lightly buttered casserole dish.

3Bake at 350° for 45 minutes.

4About 10 minutes before it is done, add 8 ounces grated Cheddar cheese and bake until cheese melts.
