- 1/2 to 3/4 c. oil
- 1/2 c. flour
- 1 c. chopped onion
- 1 c. chopped bell pepper
- 2 c. chopped tomatoes
- 1/2 can tomato paste
- 3 c. water
- 16 oz. frozen corn
- 1 lb. cubed ham or 1 1/2 lb. smoked sausage
Directions

1Make roux (medium brown color).

2Add onions and bell peppers. Cook 5 minutes.

3Add tomato products and water; mix well.

4Add all other ingredients.

5Bring to a boil, stirring frequently.

6Reduce heat; simmer, partially covered, for 1 hour.

7Great with cornbread.
