  • 3 eggs, separated
  • 1 1/4 c. milk, scalded
  • 3/4 c. corn meal
  • 3/4 tsp. salt
  • 2 Tbsp. butter
  • 1 c. creamed corn (17 oz.)
  • 3/4 tsp. baking powder

    Grease 2-quart baking dish.

    Beat egg whites until stiff but not dry; beat egg yolks.

    Stir corn meal and salt into scalded milk, beating hard.

    Cook for a few seconds over low heat, stirring like thick mush.

    Blend in butter and corn, then baking powder.

    Fold in yolks, then whites.

    Pour into baking dish.

    Bake at 375° for about 30 minutes or until knife in center comes out clean.
