  • 1/3 cups Yellow Corn Meal
  • 1 cup Milk
  • 1/2 cups Green Onions, Chopped
  • 1/8 teaspoons Red Pepper Flakes
  • 1 cup Canned Kernel Corn, Or Mexicorn (drained)
  • 1 cup Shredded Cheddar, Divided
  • 2 whole Eggs, Beaten
  • 3 Tablespoons Butter, Cut Into Small Pieces, Plus Additional For Serving With Bread

    Preheat oven to 400F.

    In a medium saucepan, stir together salt, cornmeal, and milk. Cook about 5 minutes until thickened.

    Add green onions and pepper flakes, corn and half the cheese. Add the eggs and whisk well.

    Pour the mixture into a buttered 1-quart baking dish. Top with butter pieces and the remaining cheese.

    Bake 35-40 minutes. Serve warm with addtional butter.
