- 1/2 teaspoons Salt
- 1/3 cups Yellow Corn Meal
- 1 cup Milk
- 1/2 cups Green Onions, Chopped
- 1/8 teaspoons Red Pepper Flakes
- 1 cup Canned Kernel Corn, Or Mexicorn (drained)
- 1 cup Shredded Cheddar, Divided
- 2 whole Eggs, Beaten
- 3 Tablespoons Butter, Cut Into Small Pieces, Plus Additional For Serving With Bread

1Preheat oven to 400F.

2In a medium saucepan, stir together salt, cornmeal, and milk. Cook about 5 minutes until thickened.

3Add green onions and pepper flakes, corn and half the cheese. Add the eggs and whisk well.

4Pour the mixture into a buttered 1-quart baking dish. Top with butter pieces and the remaining cheese.

5Bake 35-40 minutes. Serve warm with addtional butter.
