Corn Tomato Chowder

Ingredients

  • 2 oz. salt pork
  • 1 small onion, sliced
  • 2 1/2 c. (No. 2 can) corn
  • 2 c. potatoes, diced
  • 1 1/2 c. tomatoes
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • dash of pepper
  • 1 qt. boiling water
  • 1 c. evaporated milk

Directions

    Cut pork into small pieces and fry slowly to a golden brown in a large saucepan.

    Add onion and cook slowly without browning for 5 minutes.

    Add corn, potatoes and tomatoes in alternate layers. Sprinkle with salt, sugar and pepper.

    Then add water and cook slowly until potatoes are tender.

    Remove from heat and stir milk in slowly.
