  • 1 c. cornmeal
  • 1 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 to 4 Tbsp. sugar (optional)
  • 1 egg
  • 1 c. milk
  • 1/4 c. oil

Directions

    Mix cornmeal, flour, baking powder, salt and sugar. Set aside. Beat egg. Add milk. Add oil. Add to cornmeal mixture; stir just enough to mix. Grease pan and fill half full. Bake at 425° until lightly browned, 20 to 25 minutes.
