  • 4 oz. skim milk
  • 1 oz. or 2 tbsp. cornmeal
  • 1/4 tsp. salt
  • 1 egg, separated
  • 10 oz. grated low fat cheddar cheese

Directions

    Over low heat, cook milk, cornmeal and salt until the mixture thickens. Stir in beaten egg yolk and cheese. Beat egg white until stiff and fold in. Place in muffin tins that have been sprayed with non-stick spray. Bake at 375° for 30 minutes.
