Ingredients

  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 c. sugar (optional)
  • 1/2 tsp. salt
  • 1 c. yellow corn meal
  • 1 c. sifted flour
  • 1 c. milk
  • 1/4 c. safflower oil
  • 1 egg (we use Egg Beaters)

Directions

    Sift together baking powder, baking soda, sugar, salt, corn meal and flour, then add egg, milk and oil and beat by hand until smooth.

    Bake in an 8-inch square pan or muffin pans in a preheated 425° oven for 20 to 25 minutes.

    Makes 14 corn sticks. Pour cornbread batter into hot, well-greased corn stick pans. Bake at 425° for 15 to 20 minutes.
