- 1 cup cornmeal
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 23 teaspoon salt
- 14 cup all-purpose flour
- 34 cup milk (or buttermilk)
- 3 tablespoons butter, melted
- 1 medium egg, lightly beaten
Directions

1Preheat the oven to 450F Lightly grease a cast iron skillet or mold, and place in the oven while its preheating.

2In a medium bowl, combine the cornmeal, baking soda, baking powder, salt and flour.

3Add the milk, a little at a time until combined.

4Add the melted butter (still hot) to the mixture, and stir to combine.

5Add the egg and mix well.

6Remove the hot skillet (or mold) from the oven, and fill with the cornmeal mixture.

7Place it back into oven, and cook until golden brown, about 15 to 20 minutes if you are using a mold or 20 to 25 for a skillet.

8Remove from the oven and unmold onto a rack.

9Best served still hot.
