  • 1 c. self-rising corn meal (not a mix)
  • 1 c. self-rising flour
  • 1 egg
  • 1 1/2 c. sweet or buttermilk
  • dash of sugar
  • Little pour of oil

Directions

    Grease medium iron skillet and warm in oven as it preheats. Mix all ingredients together.

    Pour into hot pan.

    Bake

    at 425° for about 25 minutes.

    If you run out of eggs, you may substitute a heaping tablespoon of mayonnaise.
