Cornbread Casserole

Ingredients
- 2 large onions, chopped
- 6 Tbsp. margarine
- 2 eggs
- 2 Tbsp. milk
- 2 cans cream-style corn
- 1 (1 lb.) pkg. cornmeal muffin mix or 2 Jiffy muffin mixes
- 1/2 pt. sour cream
- 2 c. shredded sharp Cheddar cheese
Directions

1Preheat oven to 425°.

2Butter a 13 x 9-inch baking dish.

3In medium skillet saute onion in margarine until golden; set aside. In a medium bowl mix eggs and milk until blended.

4Add corn and muffin mix, mix well.

5Spread cornbread batter into prepared dish. Spoon sauteed onion over top.

6Spread sour cream over onion. Sprinkle with cheese.

7Bake 35 minutes or until puffed and golden. Let stand 10 minutes.

8Cut into squares.
