Cornbread Casserole

  • 1 stick margarine
  • 1 lb. ground chuck
  • 1 medium onion, chopped
  • 1 (15 1/2 oz.) can tomato sauce
  • 1 pkg. Mexican cornbread mix
  • 1 (16 oz.) pkg. frozen vegetables

Directions

    Melt margarine in saucepan.

    Saute onion for several minutes in margarine.

    Cook beef until brown; drain.

    Pour onion, margarine and tomato sauce over mixed vegetables.

    Simmer several minutes.

    Mix cornbread mix as directed.

    Pour over top of beef and vegetables and bake at 350° for 45 minutes.
