- 2 large onions, chopped
- 6 Tbsp. butter or margarine
- 2 eggs
- 2 (17 oz.) cans cream-style corn
- 1 (1 lb.) pkg. cornmeal muffin mix
- 1/2 pt. dairy sour cream
- 2 c. shredded sharp Cheddar cheese
Directions

1Preheat oven to 425°.

2Grease a 9 x 13-inch baking dish. Saute onion in butter until golden; set aside in a medium bowl. Mix eggs and milk until blended.

3Add corn and muffin mix; mix well.

4Spread corn batter into preheated baking dish.

5Spoon sauteed onion over top and spread sour cream over onion.

6Sprinkle with cheese.

7Bake 35 minutes or until puffed and golden.

8Let stand 10 minutes before cutting into squares.
