Cornbread Dressing(May Be Halved)

  • 3 c. regular cornmeal
  • 1 c. plain flour
  • 5 eggs
  • 1/2 c. chopped onion
  • 2 tsp. salt
  • black pepper to taste
  • 1 tsp. soda
  • 2 pt. buttermilk
  • 2 Tbsp. (1 each sage, thyme)
  • 1 c. chopped celery
  • hot turkey or chicken broth
  • boiled chicken parts

Directions

    In large bowl, put cornmeal.

    Sift flour, soda and salt.

    Add to cornmeal.

    Add onion and beaten eggs.

    Add enough buttermilk to make a soft but not thin batter.

    Add celery.

    Pour into large greased baking dish and bake 30 to 40 minutes at 400°.

    Take out of oven; pour broth in while tearing dressing with potato masher. Add enough broth to make a very soft batter.

    Add sage, thyme, black pepper and chicken parts, boiled, boned and chopped.

    Pour into large greased baking dish.

    Bake at 375° for 40 minutes.
