- 1 (8 1/2 ounce) package cornbread mix
- 6 green onions, chopped
- 1 medium red bell pepper, chopped
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 2 medium tomatoes, seeded and chopped
- 1/2 cup shredded cheddar cheese
Directions

1Prepare cornbread according to box directions; bake and cool completely.

2Crumble cornbread into a 2 quart glass serving bowl.

3Layer with onions, red pepper, corn and beans.

4In a small bowl, combine mayo and sour cream; spread over the veggies.

5Sprinkle with tomatoes and cheese.
