  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 4 tbs cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 eggs
  • 4 tbs veg oil cup
  • 1/4 cooked frozen corn (pulsed)

    Pre heat oven to 425 deg F (200 deg) In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. Add the milk, eggs and oil; beat for 1 minute and add pulsed corn at the end. Pour into a 6 cup cake tray with liners. Bake for 20 minutes give or take 5 min or until golden brown and tests done.
