  • 1 c. self-rising cornmeal
  • 2 Tbsp. plain flour
  • 1 c. sour cream (8 oz.)
  • 1 stick butter, melted
  • 2 eggs
  • 1 c. English peas
  • 1 c. onions, chopped
  • 1 c. green peppers, chopped
  • 1 c. fresh tomatoes, chopped
  • 1 c. sweet pickles, cubed
  • 1 c. mayonnaise
  • 1 Tbsp. sugar
  • 1 c. shredded cheese (of choice)

Directions

    Mix cornmeal, flour, sour cream, butter and eggs. Bake until done at 350°. Let cool and crumble in a 9 x 13-inch dish. Add one layer at a time the peas, onions, pepper, tomatoes and pickles. Top with 1 cup mayonnaise and 1 tablespoon sugar, mixed well. Then sprinkle with the cheese.
