Cornbread Salad

  • 1 box Jiffy cornbread mix
  • 1 egg
  • 1/3 c. milk
  • 4 tomatoes, peeled
  • 1 big green pepper
  • 1 red onion
  • 1/2 c. sweet pickles
  • 1/2 c. dill pickles
  • 9 slices bacon, cooked
  • 1 c. mayonnaise

Directions

    Combine cornbread mix, egg and milk.

    Cook until done.

    Cut up tomatoes, pepper, onion and bacon.

    Combine in big bowl.

    Add crumbled cornbread, mayonnaise and pickles (I substitute sweet pickle relish).

    Put in refrigerator.

    Better if it sets awhile.
