Cornbread Salad

  • 1 box Jiffy cornbread mix, prepared by directions
  • 4 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 Vidalia onion, chopped
  • 1/2 c. pickle relish or chopped sweet pickles
  • 9 slices bacon
  • 1 c. mayonnaise and 1/2 c. pickle juice, mixed

    Mix vegetables and relish.

    In a pretty glass bowl, layer cornbread, vegetables and dressing; second layer as first.

    Cover and refrigerate for 3 hours.

    Crumble bacon on top and serve. Good for a salad to serve with fish or anytime.
