Ingredients
- 1/2 to 1 lb. bacon or you can substitute Oscar Mayer real bacon bits
- 1 box Jiffy muffin cornbread mix
- 1/2 c. onions
- 1/2 c. green peppers
- 1/2 c. celery or any vegetable you like (cauliflower, radishes or carrots)
- 1 c. regular or lite mayo or regular or lite salad dressing
- 2 Tbsp. sugar (optional)
- 1 c. chopped tomatoes
Directions

1Bake cornbread according to directions on box. Let cool. Mix mayo or salad dressing with sugar.

2Add onions, green pepper, celery or other vegetables.

3Mix well.

4Add chopped tomatoes.

5Mix gently.

6Crumble 1/2 of cornbread in 2-quart casserole.

7Add bacon or bacon bits.

8Add vegetable mixture on top of this.

9Top with other 1/2 of crumbled cornbread.

10Can add paprika or bacon bits on top for color.

11Refrigerate.

12Can be made night before.
