Cornbread Taco Bake

  • 1 1/2 lb ground beef
  • 1 pkg taco seasoning
  • 1/2 cup water
  • 1 can whole kernel corn
  • 1 medium green pepper (chopped)
  • 1 can (8 oz) tomato sauce
  • 1 2.8 oz can Durkee onions
  • 1/2 c shredded cheddar cheese
  • 1- 8 1/2 oz pkg corn muffin mix

Directions

    Preheat oven to 400 degrees.

    Brown ground beef and pepper. Drain.

    Stir in taco seasoning, water, corn, and tomato sauce. Pour in 2 qt. casserole dish.

    In small bowl prepare corn meal mix according to package.

    Stir in half can of onions.

    Spoon in batter around meat mixture.

    Bake uncovered for 20 minutes.

    Top corn bread with remaining onions and cheese.

    Cook 3 to 5 minutes longer until onions are brown.
