- 1 cup yellow cornmeal
- 2/3 cup sifted all-purpose flour
- 3 tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup melted unsalted butter, cooled to room temperature
- 1-1/4 cup buttermilk, at room temperature
- 1 egg, slightly beaten, at room temperature
Directions

1Heat oven to 400F.

2When hot, heat an 8-inch cast-iron divided triangle pan in oven until very hot, 10 to 15 minutes.

3Combine cornmeal, flour, sugar, baking powder, and salt in a large bowl.

4Set aside.

5Combine all but approximately 1 tsp.

6of the butter, buttermilk, and egg.

7Stir into the dry ingredients just until blended.

8Remove triangle pan from oven to a trivet or hot pad.

9Using a pastry brush, quickly coat pan with the remaining tps.

12Bake until golden brown, approximately 20 minutes.

13Transfer pan to a wire rack, and cool for 5 minutes.
