  • 3 cups Fresh Spinach Or Other Greens
  • 3 whole Eggs
  • 1-1/2 cup Yogurt
  • 2/3 teaspoons Himalayan Salt
  • 1 teaspoon Baking Powder
  • 2 cups All-purpose Flour
  • 2-1/4 cups Corn Flour
  • 1/2 cups Olive Oil
  • 400 grams Unsalted Cottage Cheese

    Preheat the oven to 360°F (180°C). Prepare 8 x 12 inch pan and set aside.

    Chop spinach into small pieces. Set aside.

    In a medium-size bowl, add eggs and whisk well. Mix in yogurt, salt, and baking powder. Add all-purpose flour and corn flour, mix until smooth. The mixture will be very thick. Finally, add olive oil and whisk well until creamy.

    Add spinach and cottage cheese. Stir gently using a spatula. Transfer mixture to pan and bake for about 40 minutes. When done, cut bread into squares.
