Corned Beef and Onions

  • 1 tsp. olive oil
  • 1 can corned beef
  • 1 sm. can tomato sauce
  • 1 md. onion, sliced
  • 1 cup white rice

Directions

    Cook rice as directed on package - usually 20 minutes.

    While rice cooks, slice onion and sautee in a teaspoon of olive oil until soft.

    Add corned beef, breaking it into smaller pieces with a fork.

    Add can of tomato sauce, cover and cook over low flame for 5 minutes.

    Serve corned beef and onions over hot cooked rice.
