  • 4 medium size potatoes (1 1/4 lb.), peeled and cut into 1/2-inch cubes
  • 2 Tbsp. vegetable oil
  • 1 large onion, coarsely shredded (5 c.)
  • 1 (12 oz.) can corned beef, crumbled
  • 1/2 tsp. caraway seed
  • 1/2 tsp. pepper
  • 1/4 tsp. salt

Directions

    Saute the potatoes in oil in large, nonstick skillet over medium heat, stirring often, until tender and lightly browned, about 10 minutes.

    Add the onions; saute 1 minute longer.

    Add cabbage, corned beef, caraway seed, pepper and salt.
