- 4 medium size potatoes (1 1/4 lb.), peeled and cut into 1/2-inch cubes
- 2 Tbsp. vegetable oil
- 1 large onion, coarsely shredded (5 c.)
- 1 (12 oz.) can corned beef, crumbled
- 1/2 tsp. caraway seed
- 1/2 tsp. pepper
- 1/4 tsp. salt
Directions

1Saute the potatoes in oil in large, nonstick skillet over medium heat, stirring often, until tender and lightly browned, about 10 minutes.

2Add the onions; saute 1 minute longer.

3Add cabbage, corned beef, caraway seed, pepper and salt.
