Corned Beef Salad

  • 1 pkg. lemon Jell-O (3 oz.)
  • 1 1/3 c. hot water
  • 3/4 c. mayonnaise
  • 1 can corned beef
  • 3 hard-boiled eggs
  • 2 Tbsp. stuffed olives
  • 2 Tbsp. green pepper
  • 1/2 c. celery, chopped fine
  • 1 tsp. onion, grated

Directions

    Mix Jell-O and water; let jell until slightly thickened.

    Add mayonnaise and whip.

    Add the beef, eggs, olives, pepper, celery and onion.

    Refrigerate.

    Cut into squares and decorate with sliced olives.
