Corned Beef Salad

Ingredients

  • 1 (3 oz.) pkg. lemon Jell-O
  • 1 c. boiling water
  • 3/4 c. cold water
  • 1 c. mayonnaise or salad dressing
  • 1 (12 oz.) can corned beef (shredded with a fork)
  • 1 c. diced celery (fine)
  • 1 small onion, finely chopped
  • 1 (2 oz.) jar chopped pimentos, drained
  • 1 small pkg. frozen peas, scalded and drained
  • 3 hard-boiled eggs, chopped

Directions

    Add boiling water to Jell-O, then add the 3/4 cup cold water. Chill until slightly thickened.

    Add all other ingredients to Jell-O mixture and pour into slightly oiled 13 x 9-inch pan.

    Chill overnight.

    Cut into squares and serve on lettuce leaf.

    A dash of horseradish added to mixture gives a little more zest.
