Cornish Game Hens\(Serves 2)

Ingredients
- 1/4 c. butter
- 1/3 c. rice
- 2 Tbsp. diced celery
- 2 Tbsp. chopped onion
- 1 c. shredded Cheddar cheese
- 2 Cornish game hens
- salt and pepper
- melted butter (for basting)
- 1 c. chicken broth
- 1 (2 oz.) can mushrooms, chopped and drained
Directions

1In 1 1/2-quart pan, melt 1/2 stick oleo.

2Add rice, celery and onions.

3Cook 5 to 10 minutes, stirring often.

4Add chicken broth and bring to a boil.

5Cover and simmer over low heat 20 minutes (until rice is fluffy).

6Add mushrooms; cool.

7Toss cheese over cooled rice mixture.

8Season hens inside with salt and pepper. Butter inside of hens.

9Stuff with rice mixture.

10Place on a rack, breast side up, in shallow baking dish; baste with butter.

11Loosely cover with foil.

12Roast in preheated oven at 400° for 30 minutes. Remove foil and continue roasting for 45 minutes.
