Cornish Hens In Rice Stuffing

- 2 game hens
- salt and pepper
- 2 Tbsp. slivered almonds
- 2 Tbsp. finely chopped onion
- 1/3 c. uncooked rice
- 3 Tbsp. butter
- 1 c. water
- 1 chicken bouillon cube
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1 (3 oz.) can chopped mushrooms, drained
Directions

1Season hens with salt and pepper.

2In saucepan, cook almonds, onion and rice in butter for 5 or 10 minutes.

3Add water, bouillon cube, lemon juice and salt.

4Boil slowly 20 to 25 minutes or until rice is fluffy.

5Stir in mushrooms.

6Brush hens with butter after stuffing with rice.

7Roast in shallow covered pan at 400° for 30 minutes.

8Uncover and roast 1 hour longer.

9Brush birds with melted butter the last 15 minutes.
