- 1 1/2 oz. yellow cornmeal
- 1/4 tsp. ground pepper
- 1/2 tsp. onion powder
- 2 Tbsp. evaporated skim milk
- 4 (5 oz.) catfish fillets
- 2 tsp. olive oil
- Creole sauce
Directions

1Preheat oven to 425°.

2Spray baking sheet with nonstick cooking spray.

3On wax paper, mix yellow cornmeal, ground pepper and onion powder.

4Pour milk into shallow bowl.

5Dip catfish fillets, one at a time, into milk, then into cornmeal, lightly coating both sides and using all milk and cornmeal.

6Place fillets on prepared baking sheet.

7Drizzle each with 1/2 teaspoon olive oil.

8Bake for 10 minutes, or until fish is cooked through.

9Place under broiler for 1 minute to brown slightly.

10Serve fillets with Creole sauce.
