- 2/3 c. yellow cornmeal
- 1/8 tsp. salt
- 2/3 c. whole wheat flour
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 2/3 c. milk
- 1 egg, beaten
- 2 Tbsp. oil
Directions

1Mix dry ingredients in a large bowl.

2Mix milk, egg and oil in a small bowl.

3Add milk mixture to dry ingredients and stir until moist (batter will be slightly lumpy).

4Pour into lined muffin tins and bake at 400° for 20 minutes.

5Makes 8 muffins.
