  • 1/3 cup Land O Lakes Butter, melted
  • 6 large (1 cup) chocolate graham crackers, finely crushed
  • 1/2 cup sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 2 Land O Lakes Eggs
  • 3/4 teaspoon peppermint extract
  • 1 to 2 drops green food color, if desired
  • 1/4 cup semi-sweet chocolate chips
  • 1/2 teaspoon shortening

    Heat oven to 350F.

    Combine melted butter and graham cracker crumbs in bowl.

    Press crumb mixture evenly onto bottom of 8-inch square baking pan.

    Set aside.

    Combine all filling ingredients in bowl.

    Beat at medium speed, scraping bowl often, until smooth.

    Spread filling over crust.

    Bake 35-40 minutes or until filling is set.

    Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring constantly, 2-3 minutes or until smooth.
