- 1 c. buttermilk
- 1 egg
- 1/4 c. yellow cornmeal
- 1/2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
Directions

1Combine buttermilk, egg and butter in a mixing bowl.

2Stir briskly until mixture is smooth.

3Stir together cornmeal, flour, salt and soda in a smaller bowl until well blended.

4Stir into the buttermilk mixture only until moistened, leaving some lumps.

5Heat griddle or skillet to medium hot.

6Grease lightly and spoon out about 3 tablespoons of batter per pancake, spreading it with back of spoon.

7Brown; then turn to brown other side.
