  • 24 small red potatoes
  • 4 tablespoons butter
  • 1 green onion, minced
  • 2 garlic cloves, minced
  • 14 cup chopped parsley
  • 12 teaspoon lemon juice
  • 1 chives, minced
  • parsley sprig (to garnish)

Directions

    Boil potatoes approximately 25 minutes.

    Melt butter in an 8 inch skillet.

    Saute green onion and garlic for 3 minutes.

    Stir in parsley and lemon juice.

    Drain potatoes and place in a serving dish.

    Pout butter mixture over potatoes to thoroughly coat.

    Sprinkle chives on top of the potatoes.

    Garnish with parsley sprigs.
