- 24 small red potatoes
- 4 tablespoons butter
- 1 green onion, minced
- 2 garlic cloves, minced
- 14 cup chopped parsley
- 12 teaspoon lemon juice
- 1 chives, minced
- parsley sprig (to garnish)
Directions

1Boil potatoes approximately 25 minutes.

2Melt butter in an 8 inch skillet.

3Saute green onion and garlic for 3 minutes.

4Stir in parsley and lemon juice.

5Drain potatoes and place in a serving dish.

6Pout butter mixture over potatoes to thoroughly coat.

7Sprinkle chives on top of the potatoes.

8Garnish with parsley sprigs.
