- 1 c. graham cracker crumbs
- 1/4 c. sugar
- 1/3 c. butter or margarine
- 2 c. cottage cheese (fine curd)
- 1/4 c. sifted flour
- 1 c. sour cream
- 4 eggs
- 1 c. sugar
- 1/4 tsp. salt
- 2 Tbsp. lemon juice
- 2 tsp. vanilla extract
Directions

1Preheat oven to 250°.

2Mix crumbs and sugar together well. Add melted butter and mix well; spread on bottom of 8 or 9-inch spring-form pan and pack down well.

3Mix next 3 ingredients and beat well.

4Beat eggs, sugar and salt together until thick and light in color.

5Add lemon juice and vanilla and beat well.

6Add to cheese mixture and beat well; pour into spring-form pan.

7Bake for 1 hour or until cake tester comes out clean.

8Turn off heat but allow cake to remain in oven with door closed for 1 hour longer.

9Allow cake to cool before removing side of pan.
