- 1 (8-inch) baked pie shell
- 2 c. cottage cheese (small curd)
- 1 Tbsp. flour
- 2 eggs
- 1 tsp. vanilla
- 7/8 c. sugar (7 oz.)
- 1 tsp. butter
- 2 Tbsp. cream
Directions

1Mash cheese with a fork.

2Beat egg yolks and add to cottage cheese.

3Stir in other ingredients and beat by hand until smooth. Fold in stiffly beaten egg whites.

4Pour into unbaked pie shell. Sprinkle top with cinnamon.

5Bake for 15 minutes at 475°, then 15 minutes at 375° (1/2 hour in all).
