Golden Corn Loaf

  • 2 (1 lb. each) cans whole kernel corn, drained
  • 1 (6 oz.) can evaporated milk
  • 1 egg, beaten
  • 2 Tbsp. finely chopped onion
  • 1/2 tsp. salt
  • dash of pepper
  • 2 slices bacon, crisp-cooked and crumbled
  • 2 oz. process Swiss cheese, shredded (1 c.)
  • 1/2 c. soft bread crumbs
  • 1 Tbsp. butter or margarine, melted

Directions

    Combine corn, milk, egg, onion, salt, pepper and 3/4 cup of the cheese.

    Turn into loaf dish (5 x 9-inch).

    Toss bread crumbs with the melted butter and remaining 1/4 cup of cheese.

    Sprinkle over corn mixture.

    Bake in a 350° oven for 25 to 30 minutes. Garnish with green pepper rings and pimentos, if desired.
