  • 2 c. low-fat cottage cheese
  • 1/2 c. soft whole wheat bread crumbs (1 slice)
  • 1/2 c. flour
  • 1/3 c. parsley
  • 1/3 c. chopped green onion
  • 2 Tbsp. butter, melted
  • 1/4 tsp. salt
  • 4 eggs

Directions

    Combine cottage cheese, bread crumbs, flour, 1/3 cup parsley, onion, butter and salt.

    Beat eggs for 5 minutes.

    Pour cottage cheese mix over eggs and fold to combine.

    Pour mix in ungreased 5 to 6-cup souffle casserole dish.

    Cook at 350° for 1 hour until knife comes out clean.
