- 2 c. low-fat cottage cheese
- 1/2 c. soft whole wheat bread crumbs (1 slice)
- 1/2 c. flour
- 1/3 c. parsley
- 1/3 c. chopped green onion
- 2 Tbsp. butter, melted
- 1/4 tsp. salt
- 4 eggs
Directions

1Combine cottage cheese, bread crumbs, flour, 1/3 cup parsley, onion, butter and salt.

2Beat eggs for 5 minutes.

3Pour cottage cheese mix over eggs and fold to combine.

4Pour mix in ungreased 5 to 6-cup souffle casserole dish.

5Cook at 350° for 1 hour until knife comes out clean.
