- 1 vanilla bean
- 1 cup sugar
- 1 avocado
- Kosher salt, as needed
- 1 (8-ounce) bag cornuts
- Special equipment: 6 bamboo skewers
Directions

1Split the vanilla bean pod and scrape out the seeds.

2In a bowl, combine pod, seeds and sugar and mix well.

3Cover the bowl and let it sit at room temperature for 24 hours, to infuse the sugar with the flavor of the vanilla

4Peel and cut avocado into 6 (1/2-inch) cubes.

5Lightly salt the avocado.

6Put the cornuts in a heavy-duty plastic bag.

7Using a rolling pin, crush the cornuts.

8(Don't crush them too fine.)

9Transfer the cornuts to a plate.

10Slide a avocado cube onto the end of each skewer.

11Roll the avocado in the cornuts to coat.

12Heat the cotton candy machine.

13Put the vanilla sugar in the extractor.

14When the cotton candy begins to form, dip the avocado skewers, one by one, and twirl to cover.
