- 4 c. frozen hash brown potatoes
- 1/2 c. chopped green pepper
- 2 Tbsp. chopped onion
- 1/3 c. margarine
- salt and pepper
- 4 eggs
- 1 c. (4 oz.) shredded sharp Cheddar cheese
Directions

1In 10-inch skillet, cook potatoes in margarine until partially thawed.

2Add green pepper and onion and continue cooking until lightly browned.

3Season to taste.

4Break eggs over potato mixture. Cover; cook until eggs are done.

5Top with cheese.

6Cover; continue cooking until cheese is melted.

7Mushrooms or green chiles may be added.

8Yields 4 servings.
