- 1/2 c. chopped green pepper
- 2 Tbsp. chopped onion
- 1/3 c. margarine
- salt and pepper
- 4 eggs
- 1 c. (4 oz.) shredded sharp Cheddar cheese
Directions

1In a 10-inch skillet, cook potatoes, green pepper and onion in margarine until lightly browned.

2Season to taste.

3Beat eggs lightly, then pour over potato mixture.

4Cover; cook until eggs are done.

5Top with cheese.

6Cover; continue cooking until cheese is melted.
