Country Cheese Soup

Ingredients
- 1/2 c. minced carrots
- 1/2 c. minced celery
- 1/3 c. minced green onion
- 4 Tbsp. butter
- 1/3 c. flour
- 2 c. chicken broth
- 1 1/2 c. light cream
- 1/4 tsp. salt
- pepper to taste
- 1 1/2 c. shredded sharp Cheddar cheese
Directions

1heat large soup pot and add butter.

2When bubbly, add vegetables and saute until soft, not brown.

3Sprinkle flour over them and cook 1 to 2 minutes, stirring constantly.

4Gradually stir in broth and cream.

5Stir until thick and starts to boil.

6Remove from heat.

7Add salt, pepper and cheese.

8Stir until cheese melts. Yields 6 servings.
