- 1 1/2 to 2 c. flour
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 Tbsp. paprika
- 1/4 tsp. ground sage
- 1/4 tsp. ground thyme
- 1/2 tsp. baking powder
- 1 c. buttermilk
- sunflower oil for frying
Directions

1Wash and pat dry chicken.

2Place in large, flat dish.

3Pour buttermilk over chicken; cover and allow to soak at least 1 hour or overnight in the refrigerator.

4Combine coating ingredients in double strength paper bag.

5Shake chicken pieces one at a time. Lay coated pieces on wax paper for 15 minutes to allow coating to dry.

6Pour oil to 1/2 inch depth in electric skillet.

7Heat to 350° to 360°.

8Fry about 3 minutes on each side.

9Reduce heat to 320°.

10Cook chicken, turning occasionally, for 25 to 35 minutes or until juices are clear and chicken is tender.
