Country Fruit Cake

Ingredients

  • 4 c. plain flour
  • 1 tsp. soda
  • 1 tsp. allspice
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1 c. brown sugar
  • 1 c. buttermilk
  • 1 c. watermelon rind preserves
  • 1 c. chopped nuts
  • juice of 1 orange
  • 4 egg yolks, beaten
  • 1 c. butter or shortening
  • 1 c. each preserves: peach, cherry and pears *
  • 2 tsp. grated orange rind

    Cream butter and sugar.

    Add eggs.

    Add dry ingredients alternately with milk.

    Blend well.

    Add preserves, orange rind, juice and nuts.

    Mix well.

    Pour into a large greased stem pan and bake for 3 to 3 1/2 hours at 325°.

    Raise oven temperature to 375° during the last 15 minutes to brown cake.

    Cake should feel firm in center when done.

    Cool on cake rack before turning out of pan.
