Country Ham & Corn Casserole

Ingredients

  • 2 c. cubed ham
  • 1/2 c. chopped green onions
  • 1/2 c. margarine or butter, melted
  • 3 eggs, well beaten
  • 15 oz. can Green Giant Mexicorn whole kernel corn with red and green pepper, drained
  • 1 pkg. corn muffin mix
  • 1 c. shredded cheddar cheese

Directions

    Heat oven to 350 degrees.

    Grease 12 x 8 inch baking dish. In a large bowl, combine all ingredients except cheese.

    Pour mixture into baking dish.

    Bake for 45 to 55 minutes or until golden brown and set.

    Sprinkle with cheese and bake an additional 1-2 minutes to melt cheese. Let stand 5 minutes before serving. Cut into squares, makes 6 servings.
