Country Potatoes

  • 12 red or new potatoes (baking potatoes can be substituted)
  • 6 strips cooked bacon, crumbled
  • 2 c. sharp Cheddar cheese, grated
  • 1/2 stick butter, melted
  • salt and pepper to taste

Directions

    Boil potatoes with skins on until done.

    Drain and let cool. Thinly slice the unpeeled potatoes.

    Butter bottom of 9 x 12-inch baking dish.

    Put one layer of potatoes, salt, pepper, half of cheese and bacon in casserole.

    Dribble half of the butter over layer.

    Make another layer the same way.

    Bake, uncovered, at 350° until bubbling hot, about 15 minutes.
