- 2 Tbsp. butter
- 1 c. sliced onion
- 6 c. red cabbage, shredded
- 1 apple, cored, pared and shredded
- 1 c. orange juice
- 3/4 tsp. salt
- 1 bay leaf
- 2 oranges, peeled and sectioned
Directions

1In a large kettle or Dutch oven, melt butter; saute onion until soft.

2Add cabbage, apple, orange juice, salt and bay leaf; mix well.

3Cover; simmer, stirring occasionally 1 1/2 hours until liquid is absorbed and cabbage is tender.

4Just before serving, stir in orange sections.

5Makes 6 servings.
