Couscous Salad

Ingredients

  • 1/4 c. olive oil
  • 1 large garlic clove, minced
  • 1 tsp. celery seed
  • 2 c. couscous
  • 2 1/4 c. boiling water
  • 1 lb. peeled, cooked shrimp
  • 1 1/2 c. chopped tomatoes
  • 1/2 c. chopped green onions
  • 1/3 c. chopped, fresh mint
  • 3 Tbsp. drained capers
  • 3/4 c. chopped celery

Directions

    Whisk the first 3 ingredients in a small bowl; season with salt and pepper.

    Place couscous in a large bowl.

    Pour boiling water over; cover and let stand until water is absorbed, about 10 minutes.

    Fluff with a fork.

    Add shrimp, tomatoes, celery, green onions, mint and capers.

    Mix in dressing.

    Chill until cold, about 30 minutes, or up to 2 hours.
