Ingredients
- 1/4 c. olive oil
- 1 large garlic clove, minced
- 1 tsp. celery seed
- 2 c. couscous
- 2 1/4 c. boiling water
- 1 lb. peeled, cooked shrimp
- 1 1/2 c. chopped tomatoes
- 1/2 c. chopped green onions
- 1/3 c. chopped, fresh mint
- 3 Tbsp. drained capers
- 3/4 c. chopped celery
Directions

1Whisk the first 3 ingredients in a small bowl; season with salt and pepper.

2Place couscous in a large bowl.

3Pour boiling water over; cover and let stand until water is absorbed, about 10 minutes.

4Fluff with a fork.

5Add shrimp, tomatoes, celery, green onions, mint and capers.

6Mix in dressing.

7Chill until cold, about 30 minutes, or up to 2 hours.

8Serves 6.
