- 1 1/2 c. cornmeal
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. buttermilk
- 2 eggs, beaten
- 1/4 c. vegetable oil
- 2 c. grated Cheddar cheese
- 1 c. cream-style corn
- 1 small onion, grated
- 12 to 14 slices bacon, cooked and crumbled
- 2 Tbsp. chopped pimento
Directions

1Combine cornmeal, flour, baking powder and salt.

2Mix well. Add buttermilk, eggs and vegetable oil. Stir well.

3Stir in cheese, corn, onion, bacon and pimento.

4Pour into greased 9-inch square pan or 8-inch black iron skillet.

5Bake at 350° for 40 to 45 minutes or until lightly browned.

6Makes 8 or 9 servings.
