Cowboy Cornbread

  • 1 lb. hamburger
  • 1 medium onion, chopped
  • 1 pkg. taco seasoning
  • 1 can green chilies
  • 8 to 12 oz. shredded Cheddar cheese
  • 1 can creamed corn
  • 2 eggs
  • 1/8 tsp. salt
  • 1 box cornbread mix

Directions

    Brown beef then add taco seasoning (do not add water).

    Mix cornbread to package directions.

    Add can of creamed corn, eggs and salt and mix well.

    Spray an iron skillet with Pam.

    Add 1/2 cornbread mix to skillet; add beef, onion, green chilies and cheese.

    Pour remaining cornbread mix over top and smooth out. Bake at 325° for 1 hour or until golden brown.
